Cucumber Kosambari

This is a very simple salad that goes well with rotis or can be eaten as it is.

Cucumber Kosambari

Ingredients:

1 medium size cucumber

a handful of split yellow moong dal

juice of half a lemon

2 pinches pepper (optional)

salt as required

few coriander leaves

Method:

  1. Wash and soak the moong dal for 30 minutes. Drain the water and keep aside.
  2. Chop the cucumber into small pieces. In a mixing bowl add cucumber pieces,dal and the remaining ingredients. Mix well and serve.
