Tiffin Sambar

Wanted to try hotel style tiffin sambar for a long time..got the recipe from Sashi’s tasty bites…came out very well..guess the special taste is due to the freshly ground spices…unlike the hotel version I added a lot of vegetables.

Tiffin Sambar


2 tbsp toor dhal

15 no sambar onions

1 cup cut vegetables of your choice
( I used capsicum and knol khol )

A small marble size tamarind

1/2 tsp turmeric powder

1 tsp jaggery

Salt as required

To roast and grind:

4-5 red chilies ( adjust according to taste )

1 tbsp coriander seeds

1/2 cup shredded coconut

2-3 sprigs of curry leaves

1 tbsp urad dhal

1 tbsp bengal gram

1/2 tsp pepper

1/2 tsp cumin seeds

For tempering:

1 tsp oil

1/2 tsp mustard

1 tsp urad dhal

Coriander leaves to garnish


  1. Roast all the ingredients for sambar powder separately in a dry pan and grind into powder.
  2. Pressure cook dhal and knolkhol separately.
  3. Extract juice from tamarind.
  4. Now heat oil in a pan, add asafetida and fenugreek seeds. Then add onions and sauté . Add cut capsicum and sauté.
  5. Now add the tamarind juice and turmeric powder. Let it boil till the raw smell disappears. Add the cooked knolkhol. Add the ground masala powder, salt and jaggery.
  6. Allow to simmer for 5 minutes. Do the tempering with mustard and urad dhal. Garnish with chopped coriander leaves and serve hot with idly/ dosa.
